Growth in restaurants and hotels

Restaurants increased their production value by 7.0 per cent to NOK 28.5 billion from 2010 to 2011. The production value in hotels increased by 7.4 per cent in the same period.

Total employment was 47 200 persons in restaurant activities and 24 400 in hotels.

Event catering and other food service activities employed 12 100 persons in 2011. The production value was NOK 9.5 billion in 2011; 7.7 per cent up from 2010.

Low profit in hotels

The gross operating margin for local kind-of-activity units in hotels and similar accommodation was 3.6 per cent in 2011. This is by far the largest group and represented 90 per cent of turnover and 89 per cent of employment in the accommodation division.

Regional differences

Stavanger has the most profitable hotels, with an operating margin averaging 9.2 per cent, while the hotels in Trondheim lost money in 2011. The average for Norway as a whole was 3.6 per cent.

The most profitable restaurants were in Kristiansand, with an average operating margin of 7.1 per cent, while the restaurants in Stavanger lost money in 2011. The national average was 4.8 per cent.

Due to a change in the production of Statistics Norway’s accommodation statistics, the figures for Holiday and short-stay accommodation and Camping grounds, recreational vehicle parks and trailer parks are not comparable with earlier periods.
